Spicy Cucumber Salad with Sesame Seeds

Main Ingredients
  • 2 large cucumbers, thinly sliced
  • 1/2 cup carrots, julienned
  • 3 green onions, thinly sliced
  • 2 tbsp Korean chili flakes (gochugaru)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp sugar
  • 1 tbsp toasted sesame seeds
  • 2 clove garlic, minced
  • 1/2 tsp salt

Instructions

Preparing the Vegetables
  1. Begin by washing the cucumbers thoroughly. Cut off the ends and slice them thinly. You can use a mandoline slicer for even slices.
  2. Julienne the carrots and thinly slice the green onions. Set these aside.
Making the Salad
  1. In a large mixing bowl, combine the sliced cucumbers, julienned carrots, and green onions.
  2. In a small bowl, whisk together the Korean chili flakes, soy sauce, rice vinegar, sesame oil, sugar, minced garlic, and salt to make the dressing.
  3. Pour the dressing over the cucumber mixture. Use your hands or a pair of tongs to gently mix everything until the vegetables are well-coated with the dressing.
  4. Sprinkle the toasted sesame seeds over the top of the salad. Mix again gently to incorporate the sesame seeds throughout the salad.
Finishing Touches
  1. Taste and adjust the seasoning if necessary, adding more salt or vinegar according to your preference.
