Grilled Shrimp and Avocado Salad with Lime Dressing

For the Salad
  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 cup mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup cotija cheese, crumbled
For the Lime Dressing
  • 1/4 cup freshly squeezed lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Preparing the Shrimp
  1. In a medium bowl, combine the shrimp, 1 tablespoon of olive oil, chili powder, ground cumin, salt, and black pepper. Mix well to ensure the shrimp are evenly coated with the spices.
  2. Preheat a grill or grill pan over medium-high heat. Once hot, place the shrimp on the grill. Cook for about 2-3 minutes on each side, or until the shrimp are opaque and have grill marks. Remove from heat and set aside to cool slightly.
Assembling the Salad
  1. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, red onion, avocado, and chopped cilantro.
  2. Add the grilled shrimp to the salad bowl. Sprinkle the crumbled cotija cheese over the top.
Making the Lime Dressing
  1. In a small bowl, whisk together the lime juice, olive oil, honey, minced garlic, salt, and black pepper until well combined.
Final Assembly
