Crunchy Cabbage and Almond Salad with Sesame Dressing

Salad
  • 4 cup napa cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup bean sprouts, rinsed and drained
  • 1/2 cup sliced almonds
  • 1/4 cup green onions, thinly sliced
  • 2 medium carrots, julienned
  • 1/4 cup fresh cilantro leaves
Dressing
  • 1/4 cup soy sauce (use a low-sodium version if preferred)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon sesame seeds, toasted
  • 1/2 teaspoon erythritol or your preferred keto-friendly sweetener

Instructions

Prepare the Salad
  1. Begin by washing and finely shredding both the napa and red cabbage. Combine them in a large salad bowl.
  2. Rinse and drain the bean sprouts thoroughly, then add them to the bowl with the cabbage.
  3. Peel and julienne the carrots, then add them to the salad mixture along with the thinly sliced green onions.
  4. Roughly chop the fresh cilantro leaves and add to the salad for a burst of freshness.
Toast the Almonds
  1. Heat a small, dry skillet over medium heat. Add the sliced almonds and toast them, stirring frequently, for about 3-5 minutes or until they are golden brown and fragrant. Remove from heat and set aside to cool.
Make the Dressing
  1. In a small mixing bowl, combine the soy sauce, rice vinegar, sesame oil, olive oil, grated ginger, minced garlic, and erythritol. Whisk together until the sweetener dissolves completely.
  2. Add the toasted sesame seeds to the dressing and whisk again to combine all ingredients thoroughly.
Assemble the Salad
  1. Pour the dressing over the salad mixture in the large bowl. Use salad tongs or two large spoons to gently toss the salad, ensuring the dressing coats all the vegetables evenly.
  2. Sprinkle the toasted sliced almonds over the top of the salad just before serving for an added crunch.
