Spiced Cauliflower and Spinach Salad with Coconut Dressing

For the Salad
  • 1 medium cauliflower, cut into florets
  • 4 cup fresh spinach leaves
  • 1 small red onion, thinly sliced
  • 1/4 cup roasted peanuts
  • 2 tbsp coconut oil
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 1/4 tsp red chili powder (adjust to taste)
For the Coconut Dressing
  • 1/2 cup coconut milk
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp grated ginger
  • Salt to taste
  • 1/4 tsp black pepper

Instructions

Preparing the Cauliflower
  1. Start by preheating the oven to 400°F (200°C).
  2. In a large bowl, combine the cauliflower florets with 2 tablespoons of coconut oil. Add the cumin seeds, turmeric powder, red chili powder, and a pinch of salt. Mix well to ensure the cauliflower is evenly coated with the spices.
  3. Spread the cauliflower florets in a single layer on a baking sheet. Roast them in the preheated oven for about 15 minutes, or until they are golden brown and tender. Stir halfway through the cooking time to ensure even roasting.
Assembling the Salad
  1. While the cauliflower is roasting, wash and dry the spinach leaves. Place them in a large salad bowl.
  2. Add the thinly sliced red onion and roasted peanuts to the bowl with the spinach.
Preparing the Coconut Dressing
  1. In a small mixing bowl, combine the coconut milk, lemon juice, olive oil, grated ginger, salt, and black pepper. Whisk together until the dressing is smooth and well-blended.
Final Assembly
  1. Once the cauliflower is roasted, allow it to cool slightly for about 5 minutes.
  2. Add the roasted cauliflower to the salad bowl with the spinach, red onion, and peanuts. Toss gently to combine.
  3. Drizzle the coconut dressing over the salad and toss again to ensure everything is well-coated with the dressing.
  4. Adjust the seasoning with additional salt or pepper if needed.
